Three Letters Down, Three More To Go

MBA done with a CPA soon to follow... hopefully!

I finished up my MBA this past December. I realize this post is delayed, but I was hoping to include a picture of my diploma, but it has yet to arrive. But I did confirm that it is on its way since I had a mini breakdown wondering if I somehow missed a class and really didn't graduate. But it was confirmed that I completed all of my requirements and did gain three little letters to add to my resume.

So that this post isn't completely boring, I will include a shot of my favorite graduation present- a ring! I wanted some sort of ring to commemorate my graduation with, but I didn't want the typical class ring. So I decided to get a ring in yellow gold with an amethyst stone since yellow and purple were my grad school's colors. And as an added bonus, amethyst is my birthstone. Now the tricky part of getting a ring was me and my extremely particular jewelry taste. I think things simple, but different. That sounds simple enough, but it clearly isn't since we visited over 12 jewelry stores to find "the one". Here it is in all of its glory! I just love it!

And if anyone is considering getting their MBA solely online, I strongly suggest East Carolina University's program. There is very little busy work, completely flexible schedule and you end up learning quite a bit.

101 List Update: Christmas Style

43. Exercise regularly

This year I am using my Christmas money for personal training sessions. I get an awesome deal through work (they pay half), so I figured this would be as good of time as any to get into shape! Hopefully this will help me check this one and all of the other exercise related items off the 101 list.

55. Create and maintain beauty routine for skin, hair, teeth, etc. for 3 months
56. Get a makeup consultation

I should start this update by stating that I am completely head-over-heels in love with Mary Kay. Their products are incredible and it doesn't hurt that my Mary Kay lady is just so much fun! So for Christmas I was able to expand on the colors from my consultation and get the microdermabrasion set. I love this so much!



63. Learn to knit
64. Knit something that can be used

My very talented neighbor (the one who taught me to run) also recently taught me how to knit. I have really been enjoying myself. So for Christmas I got a few more sets of needles, yarn and an awesome cable knitting book. On Christmas Day I completed my first item: coffee mug koozie!

74. Decorate my office


My office is definitely getting very closed to finished. However, I saw this calendar and couldn't pass it up! It is so colorful, yet so practical! This was an early Christmas present since it was too cute to wrap.

Big News!

I have been a posting slacker lately, but I promise it is because things have been crazy.

First, I have finished my MBA. Hopefully I find out soon that my hard work was good enough and then I'll graduate! But at least for now I'm celebrating the fact that there is no more work! Woohoo!!

Second, we found an amazing house that we want to buy. It is right down the street from our current house, but is quite a bit bigger to be able to fill with kiddos one day! It isn't perfect since it is yellow, has popcorn ceilings and quite a bit of carpet (Kevin's top 3 house pet peeves), but the layout is awesome and the potential is there!

Third, our house is now on the market so we can have a chance to buy that house! We love our house, so it is bittersweet to think of saying goodbye. But we will see if all of the stars align so that the move can happen. If not, then at least we can stay in a home we love in a neighborhood that could never be topped!

My First 5k!

I'm so excited to write this post! It is a good thing yesterday I decided to break my running silence on here because I think it gave me extra motivation in my run last night to avoid the blog curse. Anyway, I ran my first 5k! Now it was completely unofficial since it wasn't an organized race or anything. But I did it! And I felt great!

I feel like there are a few people I should thank! First, my awesome running coach Amanda. She has been very encouraging throughout this running process and has kept everything very positive for me!

Second, the Gym Boss. No this isn't my secret name for Amanda when she makes me keep running. It is this glorious gadget pictured below. I hate timing intervals because I'm constantly checking to see how much longer making my runs painful. But the Gym Boss has allowed me to relax and enjoy those running intervals. Plus the hot pink color gives me a girl-power fist pump when I need that extra bit of motivation!
Finally, I need to thank MapMyRun because without this site I would have no clue how far I run. If you are a newbie runner like me, you definitely should check it out! I already have my next 5k loop in my neighborhood all mapped out!

For those of you interested in the official stats of my unofficial 5k, I covered 3.3 miles in 51 min and 18 seconds. I have been shooting to complete my first 5k in 50 minutes, so I was pleasantly pleased to see that I might even be able to beat my goal!

Running Blog Curse

I have purposely have been avoiding blogging about running. It seems these sorts of posts curse me and I stop running due to injury or illness. But since I've had a small bout with both (runner's knee and an annoying cold), I'm hoping I'll be able to successfully avoid the curse!

First, I started with the all important shoe fitting (#45). Apparently I am a overpronater and these shoes are the solution. I think they have really made a different this go round!


My next step was to figure out a program that would work for me. Luckily my amazing neighbor volunteered to be my personal running coach. We run together about once a week and then I run 2 other times during the week. We are doing interval training (walk/run) that is similar to C25K. I figured it is sorta like my own person C25K, so it can count towards that goal on my 101 list.

So far I have been doing really well. We started with running 1 min, walking 3. Tonight I'm considering trying to run for 3 min and walk for 3. I might chicken out and run 2:30 walk 3. But that is still, I'm very proud of how much I've increased those times in just a month! The best part of all of it is that I actually have been enjoying myself! Wait, did I really just say that?!? It is true, I really have loved not only the actually runs but the feeling of accomplishment when I'm done. I'm definitely addicted to that runner's high!

Things have been going so well that I actually signed up for my first 5k! I know I won't be able to run the whole thing, but my goal is to just complete one and that will definitely be possible!

I'm back and with recipes!

Yes, I've been MIA for a while, but I'm back! I've been super busy trying to survive 2 classes in my first summer semester. The good news is that only 2 finals are left for this semester! Then only 3 classes, yes 3, stand between me and graduation! I can't wait!!!

This weekend was awesome! Friday we went to our neighborhood Happy Hour, which was a great time as usual. Then on Saturday I had the girls over for a Pampered Chef party (#98). I made Buffalo Chicken Dip, Apple Crisp Cheese Ball from Tastefully Simple, and Fruit Tarts. These are all super easy and delicious. Maria, the Pampered Chef consultant, made 3 delicious dishes: mango salsa, artichoke cups and 3 cheese pizza. I'll post those recipes when I get them.

Buffalo Chicken Dip
3 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
3/4 cup pepper sauce, such as Franks Red Hot
1 1/2 cups shredded Cheddar cheese
1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box crackers


Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

Fruit Tarts
Sugar Cookie Dough
Lemon Curd
Raspberry Jam
Various fruit (I use strawberries and blueberries)


Cook the sugar cookies as usual. Top with a then layer of lemon curd. Then spread a thin layer of raspberry jam. Top with fruit. Serve immediately. These can't be made ahead of time because the cookies get soggy.


Sunday we went to a going away party for one of our neighbors. It was mexican themed and the food was amazing! I made this yummy (and healthy) Mexican rice from one of my favorite cooking blogs.




Mexican Tomato Rice and Beans
1 cup of white rice (I use brown rice and you don't know the difference)
2 cups of water
1 15 oz can of diced tomatoes
1-2 tsp olive oil
5-6 cloves of garlic, chopped
1 jalapeno, seeded and chopped finely
1 15 oz can of black beans, drained and rinsed
2 tsp ground cumin
1 tsp chili powder
1/2 tsp oregano
Sea salt and freshly cracked pepper, to taste
1/4 cup of fresh cilantro, chopped finely

Bring the water to boil in a large sauce pan over medium high heat, add the rice, cover with lid and simmer on low for 20 minutes. Remove from heat and let stand, covered, for another 5 minutes.

While the rice steams, set a fine sieve in a large measuring cup and drain the tomatoes. Add enough water to the tomato juice to equal 1 cup. Chop the tomatoes very finely.

Heat the olive oil a large skillet over medium heat. Add the garlic and jalapeno to the skillet and sauté for 1 minute, stirring constantly. Add the black beans, cumin, chili powder, oregano, sea salt and freshly cracked pepper, to taste. Stir in the tomato juice mixture and bring to a boil. Adjust the heat to maintain a gentle boil and cook, stirring occasionally, until the beans absorb much of the liquid, 5-7 minutes. Add the tomatoes, cilantro and cooked rice then cook, stirring occasionally, until the rice is warm, 1-2 minutes. Serve immediately. Also stays nice in a crockpot on low.

A great weekend all in all, probably because not quite enough studying was being done!

Mixing Things Up!

I've been trying to be more dedicated to Weight Watchers lately, but have been bored by our Go-To dinners. I have tried some new recipes that are deleicious and were happily added to the Go-To list!

As many of you know, I LOVE Thai food. Fortunately for our budget, I haven't found a Thai restaurant in Raleigh (yet) that measures up to My Little Thai Kitchen in Jersey. (It is really called The Little Thai Kitchen, but it was mine! I claimed it!) I came across this Thai Coconut Curry Shrimp recipe on one of my favorite healthy recipe sources and had to try it. After a bit of searching for the ethnic ingredients (those in Raleigh head to Harris Teeter), I was amazed how "authentic" this tasted for being made at home! It has a great flavor with a little spice! And it is only 3 WW points!
We put the shrimp over Trader Joe's frozen Jasmine Rice. This added a nice touch! Below is a picture of the box so you know what you are looking for. Next time I think we are going to add some veggies (mushrooms, squash, carrots) to make it a complete meal!

I recently heard about adding shrimp to Knorr's Side. I have always been a fan of the Knorr's Sides Plus because of the hidden veggies, but it had never occurred to me to add shrimp to them. We thawed shrimp while the pasta was cooking and just threw them in during the last minute. It was a super quick dinner and very yummy! Below is a picture of the flavor we used. However, I was unable to find Knorr's Sides Plus during my recent trip to Harris Teeter. I'm really hoping these didn't get discountinued right as I figured out an easy and yummy dinner.

So the last "recipe" has become one of my favorite snacks/breakfast. Despite not being a huge fan of peanut butter, I have loved it with banana. At a WW meeting, the banana hot dog was discussed and I've since become obsessed. It is quite simple. Hot dog bun covered in peanut butter (and honey if you are feeling crazy) with a banana. This can be as low as 5 WW points if you use a 1 point bun and a Tbsp of peanut butter. I also add some honey for an extra point because it is just delicious!

my 1001 things in 101 days list has been updated here! I think I might finally be caught up with my updates!

A few more 2009 updates....

To keep in the spirit of 2009 updates, here are the "in progress" items from my list. Some have continued to make progress and some others need to start over. You win some, you lose some!

25. Try 100 new recipes (36/100)
26. Try 30 new slow cooker recipes (13/30)
27. Try 20 new restaurant/bars (15/20)

The above three are definitely still in progress. But quite a bit of progress has been made towards these in 2009. Although I haven’t kept track of the specific recipes/restaurants I think I have updated them with reasonable amounts.

29. Pack lunch for one month (business trips excluded)

This one I need to restart as of 12-28-2009. Hopefully I’ll be able to complete this one in January since it has proven to be quite difficult.

35. Save $500 using coupons ($325/$500)

We have saved quite a bit of money using coupons, especially using restaurant.com. We have definitely saved over $50 using these. Also, we used some awesome coupons when we landscaped our backyard and saved over $200!

37. Go to the dentist twice a year (2/6)

We found a dentist that we really love and thankfully he is close to home. So this one should be quite easy to complete.

62. Learn to sew

For Christmas I got a sewing machine. That is step one in my quest to learn to sew.

79. Finish my MBA (8/16 classes)

I have decided to accelerate the second half of my MBA to graduate Dec 2009. This is going to be a major focus of 2009. It is very encouraging to say that I’ll graduate this year! Can’t wait to be done!

87. Volunteer once a month for six months (0/6)

This one needs to be restarted as well. I’ll have to research to find a organization that I’m passionate about.

89. Have Rudy become a certified Therapy Dog

Recently Rudy passed his Canine Good Citizen test. Now he is eligible to enroll in Therapy Dog classes. We are still debating if this is the correct career path for him, so we are giving him some time to mature and hopefully become more Eeyore-like.

94. Have date night once a month for a year (0/12)

I think this is going to be a great one to restart in 2009. I honestly think we have probably had dinner out at least once a month for the past year. But I think it will be fun for both of us to plan date nights each month.

Happy New Year!

It has been quite a bit since I've posted on this blog or even updated my 1001 list. So since it is a new year, I figured I should start out on the right foot with an update from 2009. So here are the items that were completed in 2009.

1. Visit New England (Boston)

Kevin and I flew up to Boston for an amazing wedding over Memorial Day- yes I realize that was a loooong time ago. Our good friends Scott (who went to high school with Kevin) and Lisa (who we've known since college when her and Scott started dating) tied the knot. We had a great time exploring Boston, or just really Faneuil Hall since that is where we spent most of our time. The highlights (besides the wedding) definitely were eating dim sum in China town and touring the Sam Adams brewery.

7. Go in the ocean and actually enjoy myself
19. Go to a museum and look at it at Kevin's pace
21. Go to the NC beach for a weekend

This summer Kevin and I randomly decided to spend a week down on the Outer Banks. Both of us would have never considered ourselves "beach people", but we figured we must be missing something so we gave it a shot... and LOVED it! We rented a great beach house at Kill Devil Hills which we shared with Rudy, my parents and friends. We all had a great time! And I actually not only got into the water, but really did have a good time. We also toured Roanoke Island with my parents. And I actually went through the Roanoke Adventure Museum at Kevin's pace only because there wasn't so much to see, but it still counts! I have a feeling a week at the Outer Banks will be a summer tradition!

9. Go to Westminster Choir College Readings and Carols

Due to the project that I've been working on in 2009, I wasn't able to take any significant vacation around Christmas. Therefore, we decided to invite Kevin's parents to Princeton so we could go see Readings and Carols. It is nice being back in Princeton again- that is where Kevin and I got married for those of you who don't know. We went to dinner at the Chinese restaurant where we had our rehearsal dinner- yum! And then headed over to the concert, which was amazing as usual. I'm not really sure the next time we'll be able to get up to Princeton during December for the concert, so it was nice to be able to check this one off the list!

14. Go to the ballet
18. Attend a Hurricanes hockey game

These next items can be checked off due to the perks of working for a large company. Frequently we are offered tickets to various shows and games since we have boxes at both DPAC and the RBC Center. Kevin and I did go to a ballet, which was disappointing since we didn't realize it was the children's matinee. Therefore it only consisted of about 20 minutes of dancing and the rest of the hour was made up of stretching and questions from the kids. We also won tickets to see the Hurricanes. Surprisingly, I love going to hockey games. It is just so much fun to watch! Hopefully, we'll be able to make it back to a few more games this year!

16. Go to a drive-in movie theater

This summer we (including Rudy) ventured to the Raleigh Road Drive-In theater in Henderson. For $5 a piece (Rudy was free), we got to see Up! and A Night at the Museum 2. Both movies were great although they ran late since they couldn't start until it was dark. Rudy had a great time except for those scary lawn chairs the people next to us brought! He is such a goof!

22. Go to Angus Barn to celebrate something

Our realtor Becky invited us out to dinner at Angus Barn to celebrate Klemm (Kevin's best friend) buying his first place and to thank us for our referrals. We absolutely love our realtor because she is so much fun to hang out with and because she knows her stuff when it comes to homes. She is just great! The dinner was quite delicious, so I'm sure we'll be going back there in the future for more celebrations!

28. Try 10 new foods (10/10)

I was worried how I would be able to complete this one, but luckily Kevin and I were in an Ethnic Supper Club this fall. Our supper club ate at Lebanese- we weren't able to go :-(, Indian, Korean and Caribbean. Between the dim sum in Boston and the various side dishes at the Korean place, I have definitely tried my 10 new foods, despite not completely knowing what they are!

36. Get a physical
38. Get my eyes dilated

I am quite proud that I was very proactive with my health in 2009 (and hopefully future years). I got a yearly physical, where I was labelled "healthy". For those who know my odd medical past, this was quite an accomplishment! And I got over my phobia of getting my eyes dilated. Everything looked good and it wasn't nearly as bad as I had thought!

58. Read a book for personal enjoyment

While I had a break from my classes this summer, I read Lipstick Jungle. It was a pretty good book and surprisingly I did enjoy myself while reading it. I think once I get through my MBA, I could definitely see doing some more reading for pleasure. But it is just too much with all of my textbook reading.

78. Buy and use reusable grocery bags

My first reusable bag was purchased from Eddie Bauer. It is a super cute print that folds into a little pouch. I kept this in my purse for quite a while before remembering to actually use it. Now we have expanded our collection with reusable grocery bags from Trader Joes. Random side note: Trader Joe's is one of the most heavenly places on earth. Hooray for ethnic food and cheap wine!!

95. Make 10 local friends (10/10)
99. Have an awesome dinner party
100. Invite entire court to a party

Kevin and I have really expanded our local network of friends this year. We have thrown a ton of parties and hosted quite a few dinner parties (between supper club and just having over various friends). We have technically invited the entire court to a few parties since they were open to everyone in our neighborhood. However, we won't ever personally invite the entire court since we have realized there are a few "crazies". Ha! There are always a few in every neighborhood and unfortunately they have to be on our court!

I'm back and running!

Yes, it has been quite a while since I have posted anything on this blog. Things have been going well, but quite hectic. I have been making quite a bit of progress on my 101 list, but that will get updated soon. There is one item on there that I really want to complete and haven't had the motivation to do so. Since my travelling schedule has finally calmed down and I have run out of good excuses, I'm going to try my best to complete the Couch 2 5k program (C25K for short). I'm hoping I'll be able to complete my first 5k in January. And in order to keep myself motivated and keep this blog alive, I'm going to blog about my runs! Hopefully I'll have some great progress to post soon!

I heart NYC!

Kevin and I made our annual trip to NYC (#2)! This trip was different from the rest because for the first time we didn't ride in one taxi. There was a lot of walking, maybe even too much for Kevin, and quite a bit of subway riding.

On one of our many walks, we found a cute Mexican restaurant that served the most amazing drink. The Mexican Bulldog combines the best of the Mexican alcoholic world- Margarita, Sangria and Corona! It was delicious!
The next night we were able to meet up with our good friends Shelley and Ben at an awesome German place! Here's Shelley with her incredible German beer sampler.

I was quite excited to order the traditional German 2-liter boot! Yummy!

The next day we took our obligatory trip to a Thai restaurant.
The meal was amazing but we both enjoyed our dessert the most- Mango and Sticky Rice.
Probably the best we have ever had!
The rest of trip was excellent. We were able have lunch with the in-laws before flying back home. Oh New York, how we'll miss you!

Corn Dip Recipe

Unfortunately, a couple in our supper club got sick and was unable to come to our last get-together. I figured it would be a good chance to try a new appetizer recipe (#25). After receiving a few recommendations, I settled on Corn Dip. We made it as directed, but found it to be bland. However, after adding salsa it was wonderful. Here's the recipe.

Mix together 1 can of cream corn, 1 drained can of corn, 8 0z. of cream cheese and 1 cup of salsa (for our updated version). Bake at 350 for 25-30 minutes until warm. Serve with Fritos Scoops. Enjoy!

Yay for Vacations!

I'm getting so excited about our upcoming vacations. Next month Kevin and I are cashing in our Xmas present from his brother to spend a weekend in his Manhattan apartment (#2). Kevin found some amazing flights (and cheap too!) to NYC for a long weekend. We both can't wait to enjoy Northern food and hopefully see some friends and family.

Our good friends are getting married in Boston (#1) this May. We were hoping to spend a long weekend in the area doing the tourist thing, but started to shorten our trip due to some high prices. However Kevin found an incredible deal for 5 days/5 nights for less than what were expecting to pay for 2 days/2 nights! So excited we will have a cool vacation and not go broke! Maybe Kevin should look into being a travel agent!

Posting Slacker!

I fully admit that I have been a complete slacker at keeping my blog updated. So here is my best attempt to fill you in on the past month and the progress I've made on my 101 list!

Reservations have been made to visit NYC (#2) and Michigan (#10)!

We tried some new recipes (#25) that were super yummy. 1) Veggie Fajitas made from stir fried peppers, mushrooms, broccoli, onions, snap peas, chili powder, fajita seasoning, salsa and lime. I thought it was delicious. Kevin missed the chicken. 2) BBQ Chicken Pizza. We used a Bob0li crust and topped it with shredded chicken covered in Sweet Baby Ray's BBQ sauce, shredded smoked Gouda and red onions! This was a HUGE hit!

We also tried a new slow cooker recipe (#26). It was Southwestern Bean Bake from Rachael Ray. Definitely a different take on baked beans, but I'm not sure it was good enough to be worth the fat in the bacon. But it would be something good to bring to a cookout.

I also found a local OB/GYN (#39) who believes I won't die if we try for a little one (#40). A definite bonus! Don't expect us to start trying any time soon, but at least we know the coast is clear when Rudy needs a playmate!

We also finished organizing our bedroom closet (#70). Definitely nice to actually have a spot for everything. And it is still Rudy's favorite room in the house!

We have officially joined a supper club (#97) through our HOA. Our group rocks! Pictures will come later!

Kevin and I continued our date nights (#94). Valentine's Day we went to El Rodeo Grill (yummy!) and then spent the evening tiling our backsplash. How romantic!

Earlier this month we saw Rent at the Durham Performing Arts Center (#15). I won 4 tickets through work and invited our good friends Laura and Tony to join us. We met up at Mellow Mushroom (#27) and were having a great meal... until the waiter spilled an entire glass of ice cold water on my crotch. Literally direct shot to my crotch. Of course, I was on the inside of a booth and had no where to go to avoid it. I definitely looked like I peed my pants. And the best part is that I won the tickets through work which means my coworkers would be at the show to witness my wet crotch. Fortunately between my dark jeans and hiding behind my husband, I don't think anyone noticed!

#25 Mustard Chicken Tenders

We finally tried a recipe that we had heard about a while ago- Mustard Chicken Tenders. It is super simple. Take chicken strips and dip in mustard (any type) and then dip in bread crumbs. Then bake!
Very simple and very tasty! We used Dijon mustard but next time I want to try honey mustard.

#27 New Restaurant

Kevin and I went to the Carolina Ale House for the first time this weekend. Odd, I know since we have lived here for almost a year and they seem to be on every corner. We weren't intentionally avoiding them, but never had a chance to try them out! We were pleasantly surprised by good bar food and great drink specials. Definitely will be heading back in the near future!
We were lucky enough to be joined by some awesome company. My friend Lisa was celebrating her birthday and a bunch of people from work showed up! It was a lot of fun and Kevin even found a Yankee buddy!

#25 New Recipe

This recipe certainly is not new to the majority of you. But it is the first time Kevin and I attempted Sloppy Joes. We used the seasoning packet and tomato paste and decided to add some Worcestershire sauce. They were pretty tasty. However, we have it on good advice that Manwich is the way to go. Don't worry we will have battle Sloppy Joe vs. Manwich soon!

#26 Slow Cooker Recipe

Tonight we tried our first Slow Cooker recipe of 2009. Thank God this went better than my Shrimp and Grits experience the other night. The special of the night was Scalloped Potatoes & Ham. This recipe was super simple, not to unhealthy, and yummy! Although to bump up the veggie factor, we are going to add peas and canned mushrooms next go round.

6 large russet potatoes, sliced into 1/4 inch rounds
1 ham steak (about 1 1/2 pounds), cut into cubes
1 can (10 3/4 ounces) condensed cream of mushroom soup (I used the 98% fat free version)
1 soup can water
1 cup shredded Cheddar cheese
Grill seasoning to taste

1. Layer potatoes and ham in slow cooker
2. Combine soup, water, cheese and seasoning in large mising bowl. Pour mixture over potatoes and ham,
3. Cover and cook on HIGH 3 1/2 hours until potatoes are fork-tender. Turn slow cooker to LOW and continue cooking 1 hour.

#70 Organize Bedroom Closet

Kev and I have been working quite hard to get our closet organized. When we moved in the boxes were merely emptied into this room, well most of them anyway. And since my ass has done some shrinking over the past year, there are quite a few items that don't fit. Hence the creation of Mount St. Elissa.
After about a week of working on and off it is almost done. Currently we are awaiting our new hangers to be delivered. But in the meantime, I'll leave you with the Before pictures. Thank God we have a cute puppy whose favorite room is our closet. Otherwise why would anyone have pics of a dirty closet?
