Happy Cinco de Mayo!

First of all I have to start off with one of my favorite pictures of Rudy. This was the first time he discovered the deliciousness of beer, Corona specifically!

I also wanted to share an awesome recipe that we are having tonight. I made this previously for Supper Club and got rave reviews and it has turned into one of my favorite salads. Doesn't it look yummy?
