Meatzza is a combination of pizza, tacos and chili and has been an old favorite in our house. I haven't made it in forever, but we both agreed last night it needs to go back on the regular list. Here is the original recipe, but below is mine revised healthier version.
Meatzza
1 box of Jiffy (8.5 oz)
3/4 cup of skim milk
1 cup frozen corn kernels
1 pound ground beef
1 small onion, finely chopped
1 tablespoon chili powder
2 teaspoons cumin
2 teaspoons cayenne sauce (Texas Pete's)
2 cups shredded cheddar
1/2 red bell pepper, chopped
2 vine ripe tomatoes, seeded and diced
1 small can of green chilies
2 scallions, chopped
Taco Sauce to pass at table
Preheat over to 400 degrees. Mix together the Jiffy and milk. Once combined then add the corn kernels. Let sit for 5 minutes- you will see small bubbles, which is good. Pour batter into a 9x13 pan and bake for 12 to 15 minutes until light golden in color.
Brown the meat over medium high heat with onion. Add spices to flavor.
Remove cornbread from oven and top with meat, cheese and veggies. Serve with taco sauce.
